Description
A delicious, moist banana bread filled with the rich flavors of caramelized bananas and brown sugar.

- 400 g ripe bananas (about 3 large)
- 250 g all-purpose flour (2 cups)
- 1 tsp baking soda (5 g)
- 1 tsp fine salt (5 g)
- 115 g unsalted butter, melted (½ cup)
- 100 g granulated sugar (½ cup)
- 50 g light brown sugar, packed (¼ cup)
- 2 large eggs (about 100 g)
- 1 tsp vanilla extract (5 ml)
- 60 g sour cream or Greek yogurt (¼ cup)
- Optional mix-ins: 75 g chopped walnuts (⅓ cup), 75 g chocolate chips (½ cup)
Instructions
- Preheat the oven to 175°C (350°F). Grease a 9 x 5-inch loaf pan and line it with parchment.
- Mash the ripe bananas in a bowl until mostly smooth. Whisk in melted butter, granulated sugar, brown sugar, eggs, vanilla, and sour cream until combined.
- In a separate bowl, whisk together flour, baking soda, and salt for even distribution.
- Pour the wet ingredients into the dry ingredients and fold with a rubber spatula until just combined.
- Scrape the batter into the prepared pan and smooth the top. Bake in the oven for 55–65 minutes or until a skewer comes out with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes, then transfer it to a cooling rack to cool for 20–30 minutes before slicing.
Notes
Use bananas with brown spots for the best flavor. Do not overmix when combining wet and dry ingredients to avoid a tough loaf.
