  • 1 large Egg (Binds the mixture)
  • 2 tablespoons Tomato Paste (Provides richness)
  • 2 cups Grated Tomatoes (Fresh or canned)
  • 2 cloves Garlic (Enhances flavor)
  • 2 tablespoons Olive Oil (For sautéing)

Instructions

  1. Combine ground meat, grated onion, parsley, cilantro, paprika, cumin, and cinnamon in a bowl. Shape into 1¼ inch meatballs and chill for 30 minutes.
  2. Heat olive oil in a pan over medium heat. Sauté grated onion until golden brown for about 5 minutes. Add minced garlic, paprika, and cumin, and stir for another minute.
  3. Add tomato paste and grated tomatoes, simmering for 25-30 minutes until thick.
  4. Add meatballs to the sauce and simmer uncovered for 10-15 minutes until cooked through.
  5. Create wells in the sauce and crack an egg into each. Cover and simmer for 10-15 minutes until egg whites are set.
  6. Garnish with fresh parsley or cilantro before serving.
