- 1 pound boneless, skinless chicken breast, sliced thinly
- 2 cups broccoli florets
- 1 cup sliced mushrooms
- 1 cup sliced bell peppers (any color)
- 1 cup snow peas
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- ¼ cup low-sodium soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- Salt and pepper, to taste
- Cooked rice or noodles, for serving
Instructions
- Slice the chicken breast into thin strips and season with salt and pepper.
- Make the Sauce: In a small bowl, combine soy sauce, cornstarch, sesame oil, rice vinegar, and sugar. Mix well and set aside.
- Heat the Oil: In a large skillet or wok, heat vegetable oil over medium-high heat.
- Cook the Chicken: Add the chicken strips to the skillet and stir-fry for about 5-7 minutes or until cooked through. Remove the chicken from the skillet and set aside.
- Stir-Fry the Vegetables: In the same skillet, add the garlic and ginger, stirring for about 30 seconds. Then add broccoli, mushrooms, bell peppers, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Combine Chicken and Sauce: Return the cooked chicken to the skillet. Pour the sauce over the chicken and vegetables, stirring to coat everything evenly. Cook for another 2-3 minutes, allowing the sauce to thicken.
- Adjust Seasoning: Taste and adjust seasoning with salt and pepper if needed.
- Serve: Remove the skillet from heat and serve the Easy Moo Goo Gai Pan over cooked rice or noodles.
