Ingredients

  • ¼ cup low-sodium soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • Cooked rice or noodles, for serving

Instructions

  1. Slice the chicken breast into thin strips and season with salt and pepper.
  2. Make the Sauce: In a small bowl, combine soy sauce, cornstarch, sesame oil, rice vinegar, and sugar. Mix well and set aside.
  3. Heat the Oil: In a large skillet or wok, heat vegetable oil over medium-high heat.
  4. Cook the Chicken: Add the chicken strips to the skillet and stir-fry for about 5-7 minutes or until cooked through. Remove the chicken from the skillet and set aside.
  5. Stir-Fry the Vegetables: In the same skillet, add the garlic and ginger, stirring for about 30 seconds. Then add broccoli, mushrooms, bell peppers, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  6. Combine Chicken and Sauce: Return the cooked chicken to the skillet. Pour the sauce over the chicken and vegetables, stirring to coat everything evenly. Cook for another 2-3 minutes, allowing the sauce to thicken.
  7. Adjust Seasoning: Taste and adjust seasoning with salt and pepper if needed.
