- 3 tablespoons unsalted butter
- 1 large yellow onion, diced
- 2 teaspoons garlic, minced
- ½ cup all-purpose flour
- 4 cups chicken broth
- 1 cup whole milk
- 1 tablespoon Dijon mustard
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 1 ½ cups cooked ham, diced
- 1 ½ cups cooked turkey, diced
- 1 cup Swiss cheese, shredded
- 1 cup mild cheddar cheese, shredded
- 1 cup grilled cheese croutons
- ⅓ cup raspberry preserves
- ¼ cup fresh parsley
Instructions
- Melt 3 tablespoons of butter in a medium pot over medium heat.
- Add 1 large diced onion and cook until soft and translucent for about 8-10 minutes.
- Stir in 2 teaspoons of minced garlic and then add ½ cup of flour, cooking for 1 minute.
- Whisk in 4 cups of chicken broth and 1 cup of whole milk gradually until well combined.
- Mix in 1 tablespoon of Dijon mustard, along with ½ teaspoon of salt and ½ teaspoon of black pepper.
- Add 1 ½ cups each of diced ham and diced turkey, mixing well into the broth.
- Simmer for 15-20 minutes on medium-low heat until thickened.
- Stir in 1 cup each of shredded Swiss cheese and mild cheddar cheese until melted and creamy.
- Serve hot, topped with grilled cheese croutons, a dollop of warmed raspberry preserves, and a sprinkle of fresh parsley.
