This Monte Cristo Soup combines savory ham, turkey, and gooey cheese with a sweet raspberry twist, creating a heartwarming dish perfect for chilly evenings.


Ingredients

  • 3 tablespoons unsalted butter
  • 1 large yellow onion, diced
  • 2 teaspoons garlic, minced
  • ½ cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup whole milk
  • 1 tablespoon Dijon mustard
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 ½ cups cooked ham, diced
  • 1 ½ cups cooked turkey, diced
  • 1 cup Swiss cheese, shredded
  • 1 cup mild cheddar cheese, shredded
  • 1 cup grilled cheese croutons
  • ⅓ cup raspberry preserves
  • ¼ cup fresh parsley

Instructions

  1. Melt 3 tablespoons of butter in a medium pot over medium heat.
  2. Add 1 large diced onion and cook until soft and translucent for about 8-10 minutes.
  3. Stir in 2 teaspoons of minced garlic and then add ½ cup of flour, cooking for 1 minute.
  4. Whisk in 4 cups of chicken broth and 1 cup of whole milk gradually until well combined.
  5. Mix in 1 tablespoon of Dijon mustard, along with ½ teaspoon of salt and ½ teaspoon of black pepper.
  6. Add 1 ½ cups each of diced ham and diced turkey, mixing well into the broth.
  7. Simmer for 15-20 minutes on medium-low heat until thickened.
  8. Stir in 1 cup each of shredded Swiss cheese and mild cheddar cheese until melted and creamy.
  9. Serve hot, topped with grilled cheese croutons, a dollop of warmed raspberry preserves, and a sprinkle of fresh parsley.
