A delicious and hearty veggie lasagna packed with layers of vegetables and cheese.
Ingredients

- 12 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 zucchini, sliced
- 1 bell pepper, chopped
- 8 ounces spinach
- 3 cups marinara sauce
- 15 ounces ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, and sauté until softened.
- Stir in zucchini and bell pepper, cooking until tender.
- Add spinach and cook until wilted.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer with lasagna noodles, ricotta, vegetable mixture, mozzarella, and marinara.
- Repeat the layering process until ingredients are used, finishing with mozzarella and Parmesan on top.
- Bake for 45 minutes or until cheese is golden and bubbly.
- Let it cool for 10 minutes before slicing and serving.
Notes
For extra flavor, add Italian herbs to the vegetable mixture.
