Description

A delicious and hearty veggie lasagna packed with layers of vegetables and cheese.


Ingredients

Scale
  • 12 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 zucchini, sliced
  • 1 bell pepper, chopped
  • 8 ounces spinach
  • 3 cups marinara sauce
  • 15 ounces ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a skillet over medium heat.
  4. Add onion and garlic, and sauté until softened.
  5. Stir in zucchini and bell pepper, cooking until tender.
  6. Add spinach and cook until wilted.
  7. Spread a layer of marinara sauce at the bottom of a baking dish.
  8. Layer with lasagna noodles, ricotta, vegetable mixture, mozzarella, and marinara.
  9. Repeat the layering process until ingredients are used, finishing with mozzarella and Parmesan on top.
  10. Bake for 45 minutes or until cheese is golden and bubbly.
  11. Let it cool for 10 minutes before slicing and serving.

Notes

For extra flavor, add Italian herbs to the vegetable mixture.
