Description

A delicious blend of grilled shrimp and traditional Mexican street corn, topped with a creamy feta cheese sauce.


Ingredients

Scale
  • 4 ears of corn, husked
  • 1 lb shrimp, peeled and deveined
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime, juiced
  • 2 tablespoons cilantro, chopped
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Grill corn for about 10 minutes, turning occasionally until charred.
  3. In a bowl, mix mayonnaise, sour cream, lime juice, cilantro, chili powder, salt, and pepper.
  4. Add grilled shrimp to the grill for about 3-4 minutes until cooked through.
  5. Spread the creamy mixture over grilled corn and top with shrimp.
  6. Garnish with crumbled feta cheese and additional cilantro.

Serve immediately for best flavor. Adjust seasoning to taste.
