A delicious blend of grilled shrimp and traditional Mexican street corn, topped with a creamy feta cheese sauce.
Ingredients

- 4 ears of corn, husked
- 1 lb shrimp, peeled and deveined
- 1/2 cup feta cheese, crumbled
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 lime, juiced
- 2 tablespoons cilantro, chopped
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Grill corn for about 10 minutes, turning occasionally until charred.
- In a bowl, mix mayonnaise, sour cream, lime juice, cilantro, chili powder, salt, and pepper.
- Add grilled shrimp to the grill for about 3-4 minutes until cooked through.
- Spread the creamy mixture over grilled corn and top with shrimp.
- Garnish with crumbled feta cheese and additional cilantro.
Notes
Serve immediately for best flavor. Adjust seasoning to taste.
