  • 1 lb (450g) large shrimp, peeled and deveined
  • 8 oz (225g) pasta (spaghetti, fettuccine, or linguine works best)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (preferably in oil)
  • 1 teaspoon crushed red pepper flakes (optional, for a slight kick)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly cracked black pepper, to taste
  • Fresh basil or parsley, for garnish
  • 1 tablespoon butter (optional, for extra richness)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Drain, reserving 1/2 cup of pasta water for later. Set the pasta aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the shrimp to the pan and cook for 2–3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
  3. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Add the sun-dried tomatoes and cook for an additional 1 minute. Pour in the chicken broth and let it simmer for 2–3 minutes to reduce slightly. Add the heavy cream, stirring to combine, and bring to a simmer. Let the sauce cook for about 4–5 minutes or until it thickens slightly.
  4. Add the cooked pasta to the skillet, tossing it in the sauce to coat the noodles. Stir in the Parmesan cheese until the sauce is creamy and smooth. Add the shrimp back into the skillet, tossing gently to combine. Season with salt and pepper to taste. If the sauce is too thick, add a little of the reserved pasta water until it reaches the desired consistency.
  5. Stir in the butter (if using) for an extra silky finish. Sprinkle with crushed red pepper flakes for a little heat, and garnish with fresh basil or parsley for color and freshness.
  6. Serve immediately, enjoying the creamy, flavorful shrimp pasta while it’s hot. This dish pairs beautifully with a side of garlic bread or a simple green salad.
