- 8 slices of bacon, chopped
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 green bell pepper, diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1/4 cup maple syrup
- 1/4 cup bourbon
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- Optional toppings: shredded cheese, sour cream, chopped green onions, or cilantro
Instructions
- In a large pot, cook the chopped bacon over medium heat until it’s crispy. Remove the bacon and set it aside on a paper towel-lined plate to drain.
- In the same pot, add olive oil if needed. Sauté the diced onion, bell pepper, and minced garlic until softened, about 5 minutes.
- Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for about 1 minute until fragrant.
- Add the diced tomatoes, kidney beans, black beans, corn, maple syrup, bourbon, and chicken or vegetable broth to the pot. Stir well to combine all ingredients.
- Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 30-40 minutes. Stir occasionally.
- After simmering, stir the crispy bacon back into the pot. Let it cook for an additional 5 minutes.
- Taste the chili and adjust the seasoning if necessary, adding more salt, pepper, or spices to your preference.
- Once ready, remove the pot from heat and let it cool slightly before serving.
