  • 8 slices of bacon, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1/4 cup maple syrup
  • 1/4 cup bourbon
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheese, sour cream, chopped green onions, or cilantro

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until it’s crispy. Remove the bacon and set it aside on a paper towel-lined plate to drain.
  2. In the same pot, add olive oil if needed. Sauté the diced onion, bell pepper, and minced garlic until softened, about 5 minutes.
  3. Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for about 1 minute until fragrant.
  4. Add the diced tomatoes, kidney beans, black beans, corn, maple syrup, bourbon, and chicken or vegetable broth to the pot. Stir well to combine all ingredients.
  5. Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 30-40 minutes. Stir occasionally.
  6. After simmering, stir the crispy bacon back into the pot. Let it cook for an additional 5 minutes.
  7. Taste the chili and adjust the seasoning if necessary, adding more salt, pepper, or spices to your preference.
  8. Once ready, remove the pot from heat and let it cool slightly before serving.
