Ingredients

  • 0.5 cup Powdered Sugar (for dough)
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 0.5 teaspoon Salt
  • 1 cup Dried Cherries (finely chopped)
  • 1 cup Powdered Sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together softened butter and 1/2 cup of powdered sugar until light and fluffy, about 2-3 minutes.
  3. Mix in vanilla extract until well combined.
  4. Gradually add flour and salt, mixing on low speed until a soft dough forms.
  5. Fold in chopped dried cherries until evenly distributed.
  6. Scoop and roll dough into 1-inch balls and place on prepared baking sheets.
  7. Bake for 12-15 minutes until bottoms are lightly golden brown.
  8. Allow cookies to cool on baking sheets for 5 minutes, then roll in remaining powdered sugar.
  9. Transfer to a wire rack to cool completely, optionally rolling in powdered sugar again.
