Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together softened butter and 1/2 cup of powdered sugar until light and fluffy, about 2-3 minutes.
- Mix in vanilla extract until well combined.
- Gradually add flour and salt, mixing on low speed until a soft dough forms.
- Fold in chopped dried cherries until evenly distributed.
- Scoop and roll dough into 1-inch balls and place on prepared baking sheets.
- Bake for 12-15 minutes until bottoms are lightly golden brown.
- Allow cookies to cool on baking sheets for 5 minutes, then roll in remaining powdered sugar.
- Transfer to a wire rack to cool completely, optionally rolling in powdered sugar again.
