Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 cup brown sugar, packed
  • 1 cup fresh pineapple chunks (or canned)
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Chopped fresh cilantro

Instructions

  1. Season the chicken breasts evenly with salt and pepper on both sides.
  2. Place a large skillet over medium-high heat and add the vegetable oil.
  3. Add the seasoned chicken breasts to the hot skillet and cook for 4-5 minutes on each side until golden brown. Remove the chicken and set aside.
  4. In the same skillet, add brown sugar, soy sauce, ketchup, minced garlic, and ground ginger. Stir well.
  5. Stir in the fresh or canned pineapple chunks into the sauce.
  6. Place the seared chicken breasts back into the skillet and spoon the sauce over the top.
  7. Reduce the heat to low, cover the skillet, and let the chicken simmer for 20-25 minutes.
  8. Verify that the internal temperature of the chicken has reached 165°F (75°C).
  9. Once cooked, sprinkle with freshly chopped cilantro.
  10. Transfer the chicken to a serving platter and drizzle with sauce.
