Delicious Hot Honey Halloumi & Couscous Salad: A Flavor-Packed Mediterranean Vegetarian Dish

- 1 large red onion, thinly sliced
- 1 tbsp extra virgin olive oil
- ½ tbsp sumac
- ¼ tsp Aleppo pepper
- ¼ tsp salt (or to taste)
- ½ cup dry pearled couscous
- 1 cup arugula, finely chopped
- 1 cup fresh spinach, finely chopped
- 1 medium cucumber, thinly sliced rounds
- 4 slices halloumi cheese
- Juice of 1 lemon
- 1 tbsp hot honey (or regular honey for milder flavor)
- Drizzle of extra virgin olive oil
- 2 tbsp extra virgin olive oil
- Juice of ½ lemon
- ¼ tsp salt
- 2 tbsp freshly chopped parsley
- Splash of water (to thin dressing as needed)
Instructions
- Add sliced red onion to a bowl. Toss with olive oil, sumac, Aleppo pepper, and salt. Refrigerate for 20–30 minutes.
- In a small saucepan, bring 1 cup water to a boil with a drizzle of olive oil and a pinch of salt. Add couscous, cook until water is absorbed, then fluff with a fork and set aside to cool slightly.
- In a bowl, mix lemon juice, hot honey, and olive oil. Coat halloumi slices in the mixture.
- Heat a skillet over medium-high. Sear halloumi 2–3 minutes per side until golden and lightly crispy.
- In a large bowl, combine cooked couscous, arugula, spinach, and cucumber. Add marinated onions and toss gently.
- Whisk olive oil, lemon juice, salt, and parsley. Add a splash of water to thin as needed.
- Pour dressing over the salad and toss until coated. Top with hot honey glazed halloumi slices and serve.
