Delicious Hot Honey Halloumi & Couscous Salad: A Flavor-Packed Mediterranean Vegetarian Dish


Ingredients

  • 1 large red onion, thinly sliced
  • 1 tbsp extra virgin olive oil
  • ½ tbsp sumac
  • ¼ tsp Aleppo pepper
  • ¼ tsp salt (or to taste)
  • ½ cup dry pearled couscous
  • 1 cup arugula, finely chopped
  • 1 cup fresh spinach, finely chopped
  • 1 medium cucumber, thinly sliced rounds
  • 4 slices halloumi cheese
  • Juice of 1 lemon
  • 1 tbsp hot honey (or regular honey for milder flavor)
  • Drizzle of extra virgin olive oil
  • 2 tbsp extra virgin olive oil
  • Juice of ½ lemon
  • ¼ tsp salt
  • 2 tbsp freshly chopped parsley
  • Splash of water (to thin dressing as needed)

Instructions

  1. Add sliced red onion to a bowl. Toss with olive oil, sumac, Aleppo pepper, and salt. Refrigerate for 20–30 minutes.
  2. In a small saucepan, bring 1 cup water to a boil with a drizzle of olive oil and a pinch of salt. Add couscous, cook until water is absorbed, then fluff with a fork and set aside to cool slightly.
  3. In a bowl, mix lemon juice, hot honey, and olive oil. Coat halloumi slices in the mixture.
  4. Heat a skillet over medium-high. Sear halloumi 2–3 minutes per side until golden and lightly crispy.
  5. In a large bowl, combine cooked couscous, arugula, spinach, and cucumber. Add marinated onions and toss gently.
  6. Whisk olive oil, lemon juice, salt, and parsley. Add a splash of water to thin as needed.
  7. Pour dressing over the salad and toss until coated. Top with hot honey glazed halloumi slices and serve.
