Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan with cooking spray or line it with muffin liners.
  2. In a large bowl, whisk together the whole wheat flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the honey or maple syrup, vegetable oil, applesauce, eggs, and vanilla extract until well combined.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Do not over-mix.
  5. If using chocolate chips, fold them gently into the batter.
  6. Spoon the batter evenly into the prepared mini muffin pan, filling each cup about 2/3 full.
  7. Place the muffin pan in the preheated oven and bake for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
