- 1 pound boneless, skinless chicken breasts
- 2 cups mixed vegetables (broccoli, bell peppers, carrots)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chicken breasts and cook until golden brown, about 6-7 minutes per side.
- Remove chicken from the skillet and set aside.
- Add the mixed vegetables and garlic to the same skillet; sauté until tender.
- Return the chicken to the skillet; sprinkle with oregano, salt, and pepper.
- Cook for another 5 minutes, until chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
For a spicier kick, add red pepper flakes when sautéing the vegetables.
