Description

A quick and nutritious chicken and vegetable skillet that is packed with flavor and perfect for a healthy weeknight dinner.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken breasts and cook until golden brown, about 6-7 minutes per side.
  3. Remove chicken from the skillet and set aside.
  4. Add the mixed vegetables and garlic to the same skillet; sauté until tender.
  5. Return the chicken to the skillet; sprinkle with oregano, salt, and pepper.
  6. Cook for another 5 minutes, until chicken is cooked through.
  7. Garnish with fresh parsley before serving.

Notes

For a spicier kick, add red pepper flakes when sautéing the vegetables.
