- 4 slices of bread (your choice: sourdough, whole grain, or white)
- 1 cup creamy ricotta cheese
- ½ cup sun-dried tomatoes, chopped
- 1 cup fresh spinach, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried basil (optional)
- Butter for grilling
Instructions
- In a bowl, combine the ricotta cheese, chopped sun-dried tomatoes, chopped spinach, garlic powder, salt, pepper, and dried basil (if using). Mix well until all ingredients are evenly distributed.
- Take two slices of bread and spread a generous portion of the ricotta filling on each slice. Sprinkle shredded mozzarella cheese on top of the filling.
- Place the remaining two slices of bread on top to create a sandwich.
- Heat a skillet over medium heat. Add olive oil and a little butter to the pan.
- Once the oil and butter are hot, carefully place the assembled sandwiches in the skillet. Cook for about 3-4 minutes until the bottom is golden brown and crispy.
- Use a spatula to gently flip the sandwiches. Cook for an additional 3-4 minutes on the other side until golden and the cheese is melted.
- Ensure both sides are crispy and the cheese has melted completely. If necessary, lower the heat to allow the cheese to melt without burning the bread.
- Once cooked, remove the sandwiches from the skillet. Let them cool slightly on a cutting board before slicing.
- Cut the sandwiches in half diagonally and serve hot.
