Ingredients

  • 4 slices of bread (your choice: sourdough, whole grain, or white)
  • 1 cup creamy ricotta cheese
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil (optional)
  • Butter for grilling

Instructions

  1. In a bowl, combine the ricotta cheese, chopped sun-dried tomatoes, chopped spinach, garlic powder, salt, pepper, and dried basil (if using). Mix well until all ingredients are evenly distributed.
  2. Take two slices of bread and spread a generous portion of the ricotta filling on each slice. Sprinkle shredded mozzarella cheese on top of the filling.
  3. Place the remaining two slices of bread on top to create a sandwich.
  4. Heat a skillet over medium heat. Add olive oil and a little butter to the pan.
  5. Once the oil and butter are hot, carefully place the assembled sandwiches in the skillet. Cook for about 3-4 minutes until the bottom is golden brown and crispy.
  6. Use a spatula to gently flip the sandwiches. Cook for an additional 3-4 minutes on the other side until golden and the cheese is melted.
  7. Ensure both sides are crispy and the cheese has melted completely. If necessary, lower the heat to allow the cheese to melt without burning the bread.
  8. Once cooked, remove the sandwiches from the skillet. Let them cool slightly on a cutting board before slicing.
  9. Cut the sandwiches in half diagonally and serve hot.
