Ingredients

- 2 medium sweet potatoes
- 1/2 cup crumbled feta cheese
- 3 tablespoons honey
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs (like thyme or rosemary) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4 inch rounds and place them on a baking sheet.
- Drizzle the olive oil over the sweet potato rounds, season with salt and pepper, and toss to coat.
- Bake for 20-25 minutes or until tender and slightly crispy. Flip them halfway for extra crunch.
- Remove from the oven and drizzle honey over the sweet potato rounds. Sprinkle crumbled feta on top.
- Garnish with fresh herbs, serve, and enjoy!
