Ingredients

  • 1 cup Gorgonzola cheese, crumbled
  • 2 tablespoons truffle oil
  • 2 tablespoons unsalted butter
  • 1 small shallot, finely chopped
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium saucepan over medium heat, melt the unsalted butter.
  2. Add the finely chopped shallots and sauté until they are translucent, about 2-3 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute, being careful not to burn it.
  4. Slowly pour in the heavy cream, stirring continuously to combine with the shallots and garlic.
  5. Once the cream is heated through, reduce the heat to low and add the crumbled Gorgonzola cheese. Stir until the cheese melts and the sauce is smooth.
  6. Drizzle in the truffle oil, mixing well. Taste and adjust seasoning with salt and black pepper if needed.
  7. Allow the sauce to simmer on low heat for about 2-3 minutes, thickening slightly.
  8. Remove from heat and garnish with chopped fresh parsley before serving.
