Ginger Scallion Chicken Noodle Soup: An Incredible Ultimate Recipe


Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 tablespoon fresh ginger, grated
  • 4 scallions, chopped (white and green parts separated)
  • 2 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 200 grams egg noodles or rice noodles
  • Salt and pepper to taste
  • Optional: Fresh cilantro for garnish

Instructions

  1. In a pot, add the chicken breasts and cover with chicken broth. Bring to a boil over medium heat.
  2. Reduce heat and let it simmer for about 15-20 minutes, or until the chicken is cooked through. Remove the chicken from the pot and let it rest.
  3. In a separate pan, heat vegetable oil over medium heat. Add the minced garlic, grated ginger, and the white parts of the scallions. Sauté for about 2-3 minutes until fragrant.
  4. Add the sautéed mixture to the chicken broth. Stir in soy sauce and sesame oil. Season with salt and pepper to taste.
  5. In the same pot, add the noodles and cook according to package instructions, usually around 5-7 minutes.
  6. While the noodles are cooking, shred the chicken into bite-sized pieces.
  7. Once the noodles are cooked, return the shredded chicken to the pot. Add the green parts of the scallions and let everything cook together for about 2-3 minutes.
  8. Taste the soup and adjust seasoning if necessary.
  9. Ladle the soup into bowls and garnish with fresh cilantro if desired.
