Ginger Scallion Chicken Noodle Soup: An Incredible Ultimate Recipe

- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 tablespoon fresh ginger, grated
- 4 scallions, chopped (white and green parts separated)
- 2 garlic cloves, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 200 grams egg noodles or rice noodles
- Salt and pepper to taste
- Optional: Fresh cilantro for garnish
Instructions
- In a pot, add the chicken breasts and cover with chicken broth. Bring to a boil over medium heat.
- Reduce heat and let it simmer for about 15-20 minutes, or until the chicken is cooked through. Remove the chicken from the pot and let it rest.
- In a separate pan, heat vegetable oil over medium heat. Add the minced garlic, grated ginger, and the white parts of the scallions. Sauté for about 2-3 minutes until fragrant.
- Add the sautéed mixture to the chicken broth. Stir in soy sauce and sesame oil. Season with salt and pepper to taste.
- In the same pot, add the noodles and cook according to package instructions, usually around 5-7 minutes.
- While the noodles are cooking, shred the chicken into bite-sized pieces.
- Once the noodles are cooked, return the shredded chicken to the pot. Add the green parts of the scallions and let everything cook together for about 2-3 minutes.
- Taste the soup and adjust seasoning if necessary.
- Ladle the soup into bowls and garnish with fresh cilantro if desired.
