Description

  • 1/2 cup corn syrup
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 2 large egg whites
  • 1 tablespoon vanilla extract
  • 1/2 cup powdered sugar
  • 1/4 cup cornstarch

Instructions

  1. Combine granulated sugar, corn syrup, salt, and water in a medium saucepan. Heat over medium heat, stirring until sugar dissolves. Bring to a gentle boil.
  2. In a separate mixing bowl, beat egg whites with an electric mixer until stiff peaks form.
  3. Gradually pour the hot syrup into the beaten egg whites while continuing to beat on medium speed for 3-5 minutes.
  4. Add vanilla extract and beat for another 5-7 minutes until the mixture is thick, glossy, and fluffy.
  5. Grease a baking pan and spread the marshmallow mixture evenly into it. Smooth the top.
  6. Let the marshmallows set at room temperature for at least 4 hours, or preferably overnight.
  7. Dust a clean surface with a mixture of powdered sugar and cornstarch.
  8. Carefully remove the marshmallow block from the pan, cut into squares, and roll each square in the powdered sugar and cornstarch mixture.
