Description

These Funfetti Shortbread Squares are a cheerful and buttery treat that melts in your mouth. Easy to make with simple ingredients, they are perfect for parties, bake sales, or any occasion that calls for a bit of fun.

Ingredients

Scale
  • 1 cup unsalted butter, room temperature
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup rainbow sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang.
  2. In a large mixing bowl, beat the unsalted butter and powdered sugar with an electric mixer until light and fluffy, about 2-3 minutes.
  3. Add the vanilla extract, almond extract (if using), and salt to the butter mixture. Beat until combined.
  4. Gradually add the flour, 1/2 cup at a time, mixing on low speed until the dough comes together.
  5. Gently fold in the rainbow sprinkles, being careful not to overmix.
  6. Transfer the dough into the prepared baking pan and press it down into an even layer.
  7. Bake for 25-30 minutes, or until the edges are lightly golden and the center is set.
  8. Remove from the oven and let cool in the pan for about 10 minutes.
  9. Use a sharp knife to cut the shortbread into squares or bars.
  10. Allow the Funfetti Shortbread Squares to cool completely on a wire rack before serving.
