Description

These Frozen Banana Snickers Bites are a delightful and healthier twist on the classic candy bar. Featuring banana slices topped with creamy peanut butter, chopped peanuts, optional caramel drizzle, and a rich chocolate coating, then frozen to create a refreshing, ice cream-like treat.


Ingredients

  • 3 large bananas
  • 1/3 cup peanut butter (or PB2 powder mixed with water)
  • ¼ cup peanuts, chopped
  • ½ cup chocolate chips
  • 2 tsp coconut oil
  • Sugar-free or regular caramel sauce for drizzle

Instructions

  1. Line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Peel the bananas, cut them in half lengthwise, then slice each half vertically to create manageable pieces. Arrange the banana slices in a single layer on the parchment-lined baking sheet.
  3. Combine the chocolate chips and coconut oil in a microwave-safe bowl. Melt them in 15-second intervals, stirring between each until smooth and fully melted.
  4. Spread about 1 tablespoon of peanut butter evenly over each banana slice. If using caramel, drizzle it on top of the peanut butter layer. Sprinkle the chopped peanuts over each slice, then drizzle with the melted chocolate.
  5. Add a light sprinkle of chopped peanuts on top of the chocolate for added crunch and texture.
  6. Place the baking sheet in the freezer for at least 2 hours or overnight to allow the banana snickers to set and become firm.
  7. Transfer any leftovers to an airtight, freezer-safe container and keep in the freezer. Before eating, allow them to thaw for about 5 minutes for the best texture and flavor.
