- 2 tbsp melted unsalted butter

- 1/4 cup sugar (for compote)
- 1 tsp vanilla extract
Instructions
- In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix eggs, milk, melted butter, and brown sugar until smooth. Combine wet and dry ingredients gently.
- Preheat a non-stick skillet over medium heat. Pour about 1/4 cup of batter onto the skillet and cook until bubbles form on top (2-3 minutes). Flip and cook until golden brown (another 2-3 minutes).
- For the compote, melt butter in a saucepan over medium heat. Add sliced apples and sugar; cook until tender and caramelized (5-7 minutes). Stir in vanilla extract at the end.
- Serve pancakes stacked high with warm caramel apple compote on top.
