Description
Indulge in the festive flavors of our Christmas Cranberry Poke Cake, a delightful dessert that perfectly balances sweet and tart.
Ingredients
Scale
- 1 box white cake mix (15.25 oz)
- 2 cups fresh cranberries
- 1 cup granulated sugar
- 1 cup water
- 1 cup whipped topping (store-bought or homemade)
- 8 oz cream cheese (softened)
- 2 tsp vanilla extract
- 1 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Prepare white cake mix according to package instructions and pour into the prepared baking dish. Bake for about 30 minutes or until a toothpick comes out clean.
- While the cake bakes, combine cranberries, granulated sugar, and water in a saucepan over medium heat. Cook until cranberries pop and juices are released, about 10 minutes.
- Once the cake cools slightly, poke holes all over its surface with a fork.
- Pour the cranberry mixture evenly over the poked cake, allowing it to seep into the holes. Chill in the fridge for at least an hour.
- In a mixing bowl, beat together cream cheese, powdered sugar, vanilla extract, and whipped topping until smooth. Spread this mixture over the chilled cake before serving.
Notes
- This cake is perfect for holiday gatherings.
- Make sure to chill the cake for the best flavor.
- Feel free to adjust the sugar based on your taste preference.
