- 300 g (2 1/2 cups) all-purpose flour
- 1/2 tsp (2.5 g) baking soda
- 1 tsp (5 g) fine sea salt
- 170 g (3/4 cup, 1 1/2 sticks) unsalted butter, softened
- 220 g (1 cup packed) light brown sugar
- 50 g (1/4 cup) granulated sugar
- 1 large egg (50 g), at room temperature
- 1 tsp (5 ml) pure vanilla extract
- 1 tbsp (15 ml) light corn syrup or clear honey (optional)
- 120 g (3/4 cup) chocolate chips or chopped nuts (optional mix-ins)
Instructions
- Preheat the oven to 190°C (375°F) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, beat the butter with brown sugar and granulated sugar until light and fluffy.
- Add the egg and vanilla, and mix until combined.
- Fold in the dry ingredients until just combined and then add in any optional mix-ins.
- Scoop the dough into balls and chill for 30 minutes.
- Bake for 9–11 minutes until edges are set and lightly browned.
- Cool on a wire rack before storing.
Notes
For extra chewiness, seal cookies slightly warm with a slice of bread or apple in an airtight container.
