Instructions
- Boil the eggs: Place eggs in a saucepan, cover with cold water, bring to a boil, simmer for 10 minutes, then cool in an ice bath.
- Peel the eggs: Gently tap and peel eggs under running water.
- Halve and remove yolks: Slice eggs lengthwise, remove yolks into a bowl, and arrange whites on a platter.
- Make the filling: Mash yolks, then mix with avocado, mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth and green.
- Pipe the filling: Spoon the mixture into a piping bag with a star tip and pipe into egg white halves to create a Christmas tree shape.
- Decorate the trees: Garnish with diced red bell pepper or cherry tomato for ornaments and a dill or parsley sprig for a topper. Dust with paprika if desired.
- Chill before serving: Refrigerate for 30 minutes to allow flavors to meld and the filling to set.
