- 1 cup pumpkin seeds
- ½ teaspoon extra-virgin olive oil
- ¼ teaspoon sea salt
- Chili powder, for sprinkling
Instructions
- Scoop the seeds from a pumpkin or winter squash and place them in a bowl of water. Rinse the seeds thoroughly in a colander to remove any pulp, then dry completely.
- Set the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Toss the dried pumpkin seeds with the olive oil and sea salt until well coated.
- Spread the seasoned seeds in a single layer on the baking sheet. Roast for 35 to 45 minutes, stirring halfway through.
- Remove the seeds from the oven and toss with chili powder. Allow to cool slightly before enjoying.
