Description

Ingredients

  • 1 cup pumpkin seeds
  • ½ teaspoon extra-virgin olive oil
  • ¼ teaspoon sea salt
  • Chili powder, for sprinkling

Instructions

  1. Scoop the seeds from a pumpkin or winter squash and place them in a bowl of water. Rinse the seeds thoroughly in a colander to remove any pulp, then dry completely.
  2. Set the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  3. Toss the dried pumpkin seeds with the olive oil and sea salt until well coated.
  4. Spread the seasoned seeds in a single layer on the baking sheet. Roast for 35 to 45 minutes, stirring halfway through.
  5. Remove the seeds from the oven and toss with chili powder. Allow to cool slightly before enjoying.
