Description
These crunchy peanut butter cups are an easy no-bake treat made with natural peanut butter, maple syrup, and puffed quinoa for a satisfying crunch, all wrapped in a smooth dark chocolate shell. Freezer-friendly, dairy-free, and perfect for quick snacks or bite-sized desserts.

- 1 cup natural peanut butter (creamy or crunchy)
- 2 Tbsp maple syrup
- 1/2 cup puffed quinoa (or crisp rice cereal)
- 1 cup dark chocolate chips or chopped dark chocolate
- 1 Tbsp coconut oil
- Sea salt flakes (optional, for topping)
Instructions
- Mix peanut butter and maple syrup until smooth. Stir in puffed quinoa until evenly combined.
- Melt dark chocolate with coconut oil (microwave in 20-second bursts, stirring, or use a double boiler) until silky.
- Line a muffin tin with liners. Spoon ~1 tsp melted chocolate into each cup; tap to spread. Freeze 5–10 minutes until set.
- Scoop ~1 Tbsp peanut butter-quinoa mixture into each cup and gently press flat.
- Spoon another teaspoon (or more) melted chocolate over each cup and smooth. Sprinkle with sea salt if desired.
- Freeze at least 30 minutes until firm. Transfer to a freezer-safe container.
