Description

Crockpot Sausage and Tortellini Soup is a hearty and flavorful dish that combines sausage, vegetables, and tortellini in a rich broth.


Ingredients

  • 1 pound Italian sausage (mild or spicy, according to preference)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 cup carrots, sliced
  • 1 cup bell pepper, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 package (9 oz) cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach (or kale)
  • ½ cup heavy cream (optional, for a creamy version)

Instructions

  1. In a skillet over medium heat, cook the Italian sausage until browned. Drain excess fat if necessary.
  2. Add the diced onion and minced garlic. Cook for another 2-3 minutes until the onion softens.
  3. Transfer the sausage mixture to the crockpot. Add chicken broth, diced tomatoes, carrots, bell pepper, Italian seasoning, salt, and pepper. Stir well to combine.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  5. About 30 minutes before serving, stir in the tortellini. If using frozen tortellini, no need to thaw.
  6. During the last 10 minutes of cooking, add the fresh spinach (or kale) and stir until wilted.
  7. If desired, stir in heavy cream just before serving for a richer flavor.
  8. Taste the soup and adjust seasonings if necessary.
  9. Ladle into bowls and enjoy your comforting soup!
