Description

Crockpot Creamy Tomato Tortellini Soup is a delicious and easy recipe perfect for any meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup heavy cream
  • 1 package (9 ounces) cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Transfer the sautéed onion and garlic to the crockpot. Add the crushed tomatoes, vegetable or chicken broth, dried basil, and dried oregano. Stir to combine.
  3. Cover the crockpot and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
  4. About 30 minutes before serving, stir in the heavy cream and cheese tortellini. Mix well and cover again.
  5. When you’re ready to serve, stir in the fresh spinach until wilted, about 5 minutes.
  6. Add salt and pepper to taste, adjusting as needed.
  7. Ladle the soup into bowls and top with grated Parmesan cheese if desired.
