- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups water
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 2 cups egg noodles
- Fresh parsley, for garnish (optional)
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the chicken broth and water over the chicken.
- Layer in the sliced carrots, celery, chopped onion, and minced garlic.
- Sprinkle in the dried thyme, dried rosemary, and season with salt and pepper.
- Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is fully cooked and tender.
- Once cooked, remove the chicken breasts, shred them with two forks, and return the shredded chicken to the crockpot.
- Stir in the egg noodles and cook on high for an additional 20-30 minutes, until the noodles are tender.
- Before serving, taste the soup and adjust the seasoning as needed.
- Serve hot, garnished with fresh parsley if desired.
