Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 2 cups egg noodles
  • Fresh parsley, for garnish (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the chicken broth and water over the chicken.
  3. Layer in the sliced carrots, celery, chopped onion, and minced garlic.
  4. Sprinkle in the dried thyme, dried rosemary, and season with salt and pepper.
  5. Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is fully cooked and tender.
  6. Once cooked, remove the chicken breasts, shred them with two forks, and return the shredded chicken to the crockpot.
  7. Stir in the egg noodles and cook on high for an additional 20-30 minutes, until the noodles are tender.
  8. Before serving, taste the soup and adjust the seasoning as needed.
  9. Serve hot, garnished with fresh parsley if desired.
