- 1 cup bourbon
- 1 cup chicken broth
- ½ cup brown sugar
- ¼ cup soy sauce

- 2 tablespoons apple cider vinegar

- 1 tablespoon minced ginger
- 1 teaspoon black pepper
- 1 teaspoon salt
- 4 cups cooked rice (for serving)

Instructions
- Place the boneless, skinless chicken thighs in the bottom of the crockpot.
- In a bowl, combine the bourbon, chicken broth, brown sugar, soy sauce, ketchup, apple cider vinegar, minced garlic, minced ginger, black pepper, and salt. Stir until well mixed.
- Pour the marinade over the chicken, ensuring all pieces are well coated.
- Cover and set the crockpot on low for 4-6 hours or high for 2-3 hours.
- When the chicken is cooked through and tender, shred it using two forks directly in the crockpot.
- Stir in the cooked rice until well combined. Let it cook for an additional 10-15 minutes to heat the rice through.
- Garnish with sliced green onions for added flavor and presentation.
