Ingredients

  • 1 pound Italian sausage (mild or spicy, your choice)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: Crusty bread for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon. This should take about 5-7 minutes.
  2. Add the chopped onion, diced carrots, and diced celery to the pot. Sauté until the vegetables are softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the chicken broth and stir well, scraping any browned bits from the bottom of the pot. Bring to a simmer.
  4. Once the soup is simmering, add the heavy cream and stir to combine. Allow the mixture to simmer for another 5 minutes.
  5. Stir in the fresh spinach and grated Parmesan cheese. Mix until the spinach is wilted and the cheese is melted. Season with Italian seasoning, salt, and pepper to taste.
  6. Let the soup simmer for an additional 5-10 minutes to allow the flavors to meld.
  7. Remove from heat and ladle the soup into bowls. Enjoy hot, optionally paired with crusty bread.
