- 1 pound Italian sausage (mild or spicy, your choice)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: Crusty bread for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon. This should take about 5-7 minutes.
- Add the chopped onion, diced carrots, and diced celery to the pot. Sauté until the vegetables are softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Pour in the chicken broth and stir well, scraping any browned bits from the bottom of the pot. Bring to a simmer.
- Once the soup is simmering, add the heavy cream and stir to combine. Allow the mixture to simmer for another 5 minutes.
- Stir in the fresh spinach and grated Parmesan cheese. Mix until the spinach is wilted and the cheese is melted. Season with Italian seasoning, salt, and pepper to taste.
- Let the soup simmer for an additional 5-10 minutes to allow the flavors to meld.
- Remove from heat and ladle the soup into bowls. Enjoy hot, optionally paired with crusty bread.
