- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 1/2 teaspoons paprika (sweet or smoked)
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- Salt, to taste
- 1 tablespoon all-purpose flour
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 teaspoon Dijon mustard (optional)
- 2 cups cooked white rice
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, paprika, and onion powder. Cook 5–6 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, add diced onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds until fragrant.
- Sprinkle flour over onions and cook 1 minute. Slowly whisk in chicken broth and simmer 2–3 minutes until slightly thickened.
- Lower heat and stir in heavy cream and Dijon mustard if using. Return chicken to skillet and simmer gently 5–7 minutes.
- Taste and adjust seasoning. Spoon creamy paprika chicken over cooked rice and garnish with parsley if desired.
