Ingredients

  • 1 lb ground Italian sausage
  • 2 medium zucchinis, diced
  • 4 cups fresh spinach
  • 3 cups chicken bone broth
  • 1 cup cream cheese
  • 1 can (15 oz) diced tomatoes
  • 1 small onion, diced
  • 23 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 bay leaf
  • Cayenne pepper to taste
  • Salt and pepper to taste
  • 12 tbsp butter for browning

Instructions

  1. Prepare ingredients: Chop onion and garlic, dice zucchini, open canned tomatoes, crumble sausage, and rinse spinach.
  2. Brown the sausage and aromatics: Melt butter in a pot, add onion, garlic, and sausage; cook until browned.
  3. Build the broth and simmer: Pour in bone broth, add zucchini, tomatoes, and spices; bring to a boil and then simmer.
  4. Emulsify creamy base: Blend remaining broth with cream cheese until smooth; stir into soup.
  5. Add greens and finish: Mix in chopped spinach until wilted.
  6. Taste and adjust: Remove bay leaf, taste for seasoning, and adjust as necessary.

Notes

For a richer mouthfeel, substitute cream cheese with mascarpone. Adjust vegetables based on personal preference.
