- 1 lb ground Italian sausage
- 2 medium zucchinis, diced
- 4 cups fresh spinach
- 3 cups chicken bone broth
- 1 cup cream cheese
- 1 can (15 oz) diced tomatoes
- 1 small onion, diced
- 2–3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 bay leaf
- Cayenne pepper to taste
- Salt and pepper to taste
- 1–2 tbsp butter for browning
Instructions
- Prepare ingredients: Chop onion and garlic, dice zucchini, open canned tomatoes, crumble sausage, and rinse spinach.
- Brown the sausage and aromatics: Melt butter in a pot, add onion, garlic, and sausage; cook until browned.
- Build the broth and simmer: Pour in bone broth, add zucchini, tomatoes, and spices; bring to a boil and then simmer.
- Emulsify creamy base: Blend remaining broth with cream cheese until smooth; stir into soup.
- Add greens and finish: Mix in chopped spinach until wilted.
- Taste and adjust: Remove bay leaf, taste for seasoning, and adjust as necessary.
Notes
For a richer mouthfeel, substitute cream cheese with mascarpone. Adjust vegetables based on personal preference.
