Ingredients

- 1 cup unsalted butter (at room temperature)
- 1/2 cup granulated sugar
- Zest of one orange or tangerine
- 1 heaping cup fresh cranberries (chopped)
- 2 cups all-purpose flour
- 1 tsp pure vanilla extract
Instructions
- Prep the cranberries by rough chopping and setting aside.
- Cream the butter, sugar, and orange zest in a food processor until well combined.
- Add flour and vanilla extract, pulsing about ten times until a lump forms.
- Incorporate the cranberries by pulsing just until evenly distributed.
- Turn the dough out and shape it into a 10-12 inch log.
- Wrap the log in plastic wrap and chill for at least 3 hours.
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- Slice the chilled dough into 1/3 inch slices and place them on the sheet.
- Bake for 10-12 minutes until pale on top and just turning golden on the bottom.
- Cool on the baking sheet for a few minutes before transferring to a cooling rack.
