Description

Ingredients

  • 4 chicken breasts
  • 8 oz brie cheese, cubed
  • 1 cup cranberry sauce (or dried cranberries)
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs (thyme, sage), zest of lemon or orange, Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C). Pull chicken from the fridge and let it come to room temp.
  2. Butterfly each chicken breast to create a pocket without cutting through.
  3. Mix brie cubes with cranberry sauce, salt, pepper, and any optional herbs/zest.
  4. Stuff each chicken breast with the filling, pressing gently.
  5. Season the outside with salt and pepper.
  6. Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
  7. Transfer to a baking dish or place the skillet in the oven. Top with breadcrumbs and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  8. Let rest for 5-10 minutes before serving.
