- 4 chicken breasts
- 8 oz brie cheese, cubed
- 1 cup cranberry sauce (or dried cranberries)
- 1 cup breadcrumbs
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional: fresh herbs (thyme, sage), zest of lemon or orange, Dijon mustard
Instructions
- Preheat oven to 375°F (190°C). Pull chicken from the fridge and let it come to room temp.
- Butterfly each chicken breast to create a pocket without cutting through.
- Mix brie cubes with cranberry sauce, salt, pepper, and any optional herbs/zest.
- Stuff each chicken breast with the filling, pressing gently.
- Season the outside with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
- Transfer to a baking dish or place the skillet in the oven. Top with breadcrumbs and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
- Let rest for 5-10 minutes before serving.
