- 4 boneless, skinless chicken breasts
- 6–8 oz brie cheese
- 4 tbsp cranberry sauce
- 1–2 tbsp olive oil
- 2 cloves garlic, minced
- Fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Prepare the filling by slicing brie and measuring cranberry sauce.
- Pat chicken dry and cut pockets into each breast. Season with salt and pepper.
- Stuff each pocket with brie and cranberry sauce. Secure with toothpicks.
- Heat olive oil in a skillet and sear chicken 2–3 minutes per side until golden brown.
- Transfer to the oven at 400°F (200°C) and bake for 20–25 minutes until the internal temperature reaches 165°F (74°C).
- Rest for 5 minutes, remove toothpicks, slice, and serve with pan juices.
Notes
For a less sweet filling, mix cranberry sauce with a teaspoon of Dijon mustard. You can prepare the stuffing ahead and refrigerate for up to 24 hours before cooking.
