Description

An elegant main course featuring juicy chicken breasts stuffed with creamy brie and tangy cranberry sauce, perfect for holiday gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 6–8 oz brie cheese
  • 4 tbsp cranberry sauce
  • 1–2 tbsp olive oil
  • 2 cloves garlic, minced
  • Fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the filling by slicing brie and measuring cranberry sauce.
  2. Pat chicken dry and cut pockets into each breast. Season with salt and pepper.
  3. Stuff each pocket with brie and cranberry sauce. Secure with toothpicks.
  4. Heat olive oil in a skillet and sear chicken 2–3 minutes per side until golden brown.
  5. Transfer to the oven at 400°F (200°C) and bake for 20–25 minutes until the internal temperature reaches 165°F (74°C).
  6. Rest for 5 minutes, remove toothpicks, slice, and serve with pan juices.

Notes

For a less sweet filling, mix cranberry sauce with a teaspoon of Dijon mustard. You can prepare the stuffing ahead and refrigerate for up to 24 hours before cooking.
