Ingredients

- 2 cloves garlic, minced

Instructions
- Prep potatoes and aromatics: Peel or scrub the potatoes and dice them. Dice the onion and mince the garlic.
- Build the aromatic base: Heat butter or oil in a pot and add onion with a pinch of salt. Sweat until translucent, then add garlic.
- Add potatoes and liquid: Add the potatoes and stock to the pot and simmer until fork-tender.
- Choose your texture method: Either puree with an immersion blender, use a roux, or mash some potatoes to thicken.
- Finish and season: After cooking, stir in milk or cream, season to taste, and add a splash of finishing acid.
- Rest and serve: Let the soup rest for 5 minutes before serving hot with your choice of toppings.
