Description

A comforting and hearty potato soup, perfect for chilly evenings, offering a blend of layers and textures.

Ingredients

Scale
  • 2 pounds potatoes (Russet or Yukon Gold)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable stock
  • 11.5 cups milk or cream (or substitute)
  • 2 tbsp butter or oil
  • Salt and black pepper
  • Optional: bacon, smoked ham, leeks, thyme, chives, cheddar

Instructions

  1. Prep potatoes and aromatics: Peel or scrub the potatoes and dice them. Dice the onion and mince the garlic.
  2. Build the aromatic base: Heat butter or oil in a pot and add onion with a pinch of salt. Sweat until translucent, then add garlic.
  3. Add potatoes and liquid: Add the potatoes and stock to the pot and simmer until fork-tender.
  4. Choose your texture method: Either puree with an immersion blender, use a roux, or mash some potatoes to thicken.
  5. Finish and season: After cooking, stir in milk or cream, season to taste, and add a splash of finishing acid.
  6. Rest and serve: Let the soup rest for 5 minutes before serving hot with your choice of toppings.

Notes

For variations, consider adding vegetables, experimenting with spices, or trying different thickening methods.
