Ingredients

  • 8 slices Thick-cut bacon
  • 1/2 cup BBQ sauce
  • 1/2 cup Mayonnaise
  • 8 slices Hearty sourdough bread
  • 2 cups Cooked chicken breast
  • 4 slices Cheddar cheese
  • 1 medium Ripe avocado
  • 2 medium Tomatoes
  • 1 cup Romaine lettuce
  • 2 tablespoons Butter
  • to taste Salt
  • to taste Pepper

Instructions

  1. Preheat oven to 400°F (200°C). Lay bacon slices on a baking sheet and bake for about 15-20 minutes, until crispy. Drain excess grease on paper towels.
  2. In a small bowl, mix BBQ sauce and mayonnaise until smooth and creamy.
  3. Lightly butter one side of each sourdough bread slice.
  4. Place a skillet on medium heat and lay the buttered side of the bread down. Add a slice of cheddar cheese to each slice.
  5. Lay thinly sliced chicken breast on top of the cheese on two of the bread slices.
  6. Spread the BBQ mayonnaise mixture on the non-buttered side of the remaining bread slices.
  7. On the chicken-covered bread, layer avocado slices, tomato slices, crispy bacon, and romaine lettuce.
  8. Sprinkle a pinch of salt and pepper over the toppings.
  9. Top each chicken-loaded slice with the other bread slices, ensuring the buttered sides are facing up.
  10. Flip the sandwich gently to grill the other side until toasty and golden brown.
  11. Slice the sandwich diagonally and serve warm.
