Description

Copycat Kozy Shack Rice Pudding is a creamy, rich dessert that mimics the popular store-bought version.


Ingredients

  • 1 cup uncooked white rice
  • 2 cups water
  • 4 cups whole milk
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs, beaten
  • Optional: raisins or other dried fruits for garnish

Instructions

  1. In a medium saucepan, combine the uncooked rice and water. Bring to a boil, then reduce heat to low and cover. Simmer for about 20 minutes until the rice is tender and water is absorbed.
  2. Add the whole milk, sugar, salt, and ground cinnamon. Mix well.
  3. Cook over medium heat, stirring frequently to prevent sticking. Allow it to simmer for about 15-20 minutes until it thickens to your desired consistency.
  4. In a separate bowl, beat the eggs. Gradually add a small amount of the warm rice mixture to temper the eggs. Stir well to combine.
  5. Slowly pour the egg mixture back into the rice pudding, stirring constantly. Cook for an additional 2-3 minutes until well combined and slightly thickened.
  6. Remove from heat and stir in the vanilla extract.
  7. Let the rice pudding cool for about 10 minutes before serving. It will thicken further as it cools.
  8. Spoon the pudding into bowls or individual cups. Garnish with cinnamon, raisins, or your favorite toppings if desired.
