Copycat Kozy Shack Rice Pudding is a creamy, rich dessert that mimics the popular store-bought version.

- 1 cup uncooked white rice
- 2 cups water
- 4 cups whole milk
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs, beaten
- Optional: raisins or other dried fruits for garnish
Instructions
- In a medium saucepan, combine the uncooked rice and water. Bring to a boil, then reduce heat to low and cover. Simmer for about 20 minutes until the rice is tender and water is absorbed.
- Add the whole milk, sugar, salt, and ground cinnamon. Mix well.
- Cook over medium heat, stirring frequently to prevent sticking. Allow it to simmer for about 15-20 minutes until it thickens to your desired consistency.
- In a separate bowl, beat the eggs. Gradually add a small amount of the warm rice mixture to temper the eggs. Stir well to combine.
- Slowly pour the egg mixture back into the rice pudding, stirring constantly. Cook for an additional 2-3 minutes until well combined and slightly thickened.
- Remove from heat and stir in the vanilla extract.
- Let the rice pudding cool for about 10 minutes before serving. It will thicken further as it cools.
- Spoon the pudding into bowls or individual cups. Garnish with cinnamon, raisins, or your favorite toppings if desired.
Notes
- This pudding can be served warm or chilled.
- Store leftovers in the refrigerator for up to 3 days.
