Description

Coconut Mango Bliss Balls are a delightful tropical treat combining the creamy richness of coconut with the sweet freshness of mango. These bite-sized treats feature a chewy glutinous rice flour base encasing a frozen mango puree center, all rolled in shredded coconut for an irresistible texture and flavor.


Ingredients

  • 1 cup glutinous rice flour
  • 1 cup coconut milk
  • 1/2 cup granulated sugar (adjust for desired sweetness)
  • 1 pinch salt
  • 1/2 cup water
  • 1/2 cup fresh mango puree
  • 1 cup shredded desiccated coconut (unsweetened)

Instructions

  1. In a mixing bowl, combine glutinous rice flour, granulated sugar, and a pinch of salt.
  2. Gradually pour in the coconut milk and water while stirring continuously to form a smooth batter.
  3. Transfer the batter into a heatproof dish and steam over medium heat for 20 to 25 minutes until the mixture sets into a sticky dough.
  4. Spoon small dollops of fresh mango puree onto a plate and freeze for 15 minutes.
  5. Lightly grease your hands. Take about a tablespoon of the steamed dough, flatten it, place a frozen mango puree dollop in the center, and roll into a smooth ball.
  6. Roll each ball in shredded desiccated coconut until fully coated.
  7. Arrange the bliss balls on a plate and refrigerate for 15 minutes to firm up.
