- 1 cup glutinous rice flour
- 1 cup coconut milk
- 1/2 cup granulated sugar (adjust for desired sweetness)
- 1 pinch salt
- 1/2 cup water
- 1/2 cup fresh mango puree
- 1 cup shredded desiccated coconut (unsweetened)
Instructions
- In a mixing bowl, combine glutinous rice flour, granulated sugar, and a pinch of salt.
- Gradually pour in the coconut milk and water while stirring continuously to form a smooth batter.
- Transfer the batter into a heatproof dish and steam over medium heat for 20 to 25 minutes until the mixture sets into a sticky dough.
- Spoon small dollops of fresh mango puree onto a plate and freeze for 15 minutes.
- Lightly grease your hands. Take about a tablespoon of the steamed dough, flatten it, place a frozen mango puree dollop in the center, and roll into a smooth ball.
- Roll each ball in shredded desiccated coconut until fully coated.
- Arrange the bliss balls on a plate and refrigerate for 15 minutes to firm up.
