  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme or rosemary
  • For the Holiday Stuffing: 1 tablespoon butter
  • 1 small onion, finely diced
  • 1 garlic clove, minced
  • 1 cup fresh spinach, chopped
  • 1/3 cup dried cranberries
  • 1/2 cup breadcrumbs
  • 1/4 cup chicken broth
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon rosemary
  • Salt and pepper to taste
  • Optional Add-Ins: Chopped pecans or walnuts
  • Fresh parsley
  • Finely diced apple cubes
  • Extra holiday herbs (thyme, oregano)

Instructions

  1. Slice each tenderloin lengthwise without cutting through, then open flat.
  2. Cover with plastic wrap and gently pound until even in thickness.
  3. Rub olive oil, salt, pepper, garlic powder, onion powder, and herbs over both sides.
  4. Sauté onion and garlic in butter. Add spinach, then cranberries, breadcrumbs, broth, sage, and rosemary; stir until moist and fragrant.
  5. Lay stuffing in an even layer over the tenderloin, leaving a border around the edges.
  6. Starting at one end, roll the turkey into a log.
  7. Secure with kitchen twine every 1.5–2 inches.
  8. Place in a baking dish and roast at 375°F (190°C) for 30–35 minutes or until internal temperature reaches 165°F (74°C).
  9. Tent with foil and rest for 10 minutes.
  10. Cut into medallions to reveal the festive spiral.
