- For the Turkey Tenderloin: 2 turkey tenderloins (about 1–1.25 lbs total)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme or rosemary
- For the Holiday Stuffing: 1 tablespoon butter
- 1 small onion, finely diced
- 1 garlic clove, minced
- 1 cup fresh spinach, chopped
- 1/3 cup dried cranberries
- 1/2 cup breadcrumbs
- 1/4 cup chicken broth
- 1/2 teaspoon dried sage
- 1/2 teaspoon rosemary
- Salt and pepper to taste
- Optional Add-Ins: Chopped pecans or walnuts
- Fresh parsley
- Finely diced apple cubes
- Extra holiday herbs (thyme, oregano)
Instructions
- Slice each tenderloin lengthwise without cutting through, then open flat.
- Cover with plastic wrap and gently pound until even in thickness.
- Rub olive oil, salt, pepper, garlic powder, onion powder, and herbs over both sides.
- Sauté onion and garlic in butter. Add spinach, then cranberries, breadcrumbs, broth, sage, and rosemary; stir until moist and fragrant.
- Lay stuffing in an even layer over the tenderloin, leaving a border around the edges.
- Starting at one end, roll the turkey into a log.
- Secure with kitchen twine every 1.5–2 inches.
- Place in a baking dish and roast at 375°F (190°C) for 30–35 minutes or until internal temperature reaches 165°F (74°C).
- Tent with foil and rest for 10 minutes.
- Cut into medallions to reveal the festive spiral.
