Description

Ingredients

  • 1 pork tenderloin (about 1.5 pounds)
  • 1 cup breadcrumbs
  • 1/2 cup diced apples
  • 1/2 cup caramelized onions
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Kitchen twine (optional)

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Butterfly the pork tenderloin by making a deep lengthwise cut down the center, being careful not to cut all the way through.
  3. Flatten the tenderloin gently to create an even surface.
  4. In a bowl, combine breadcrumbs, apples, caramelized onions, thyme, salt, and pepper. Drizzle with olive oil and mix well.
  5. Spread the stuffing mixture evenly over the butterflied tenderloin.
  6. Fold the tenderloin back together and tie with kitchen twine if desired.
  7. Heat olive oil in an oven-safe skillet over medium-high heat and sear the tenderloin on all sides, about 2-3 minutes per side.
  8. Transfer the skillet to the oven and roast for 15-20 minutes, until the internal temperature reaches 145°F (63°C).
  9. Remove from the oven and let rest for 5-10 minutes before slicing and serving.
