Ingredients

  • 1 cup cooked and crumbled breakfast sausage (or a vegetarian alternative)
  • 1 cup diced onions
  • 1 cup diced bell peppers (optional)
  • 2 cups fresh spinach (or other greens)
  • 2 cups cubed bread (preferably day-old or slightly toasted)
  • Butter or cooking spray (for greasing the baking dish)

Instructions

  1. Cook the sausage in a skillet until browned. Sauté onions, bell peppers, and spinach until softened. Set aside.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and dried thyme. Stir in the cooked sausage, sautéed vegetables, and cheese.
  3. Grease a 9×13-inch baking dish. Spread the cubed bread evenly over the bottom of the dish. Pour the egg mixture over the bread, ensuring the bread is well-coated.
  4. Cover the dish with plastic wrap and refrigerate overnight to let the bread soak up the egg mixture.
