Description

Ingredients

  • 1 ½ cups Oreo crumbs (about 24 cookies)
  • 6 Tablespoons (85 g) butter, melted
  • 1 ¼ cups (300 ml) heavy cream
  • 2 cups (12 oz) good-quality bittersweet chocolate, chopped into similar size pieces
  • 1 teaspoon pure vanilla extract
  • 2 pints (about 4 cups) fresh raspberries
  • Confectioners’ sugar for dusting

Instructions

  1. Preheat your oven to 325°F (163°C). Use a food processor to crush the Oreo cookies into fine crumbs. Add the melted butter and pulse a few times until the mixture combines well.
  2. Transfer the Oreo mixture into a 9-inch tart pan with a removable bottom. Press firmly into the bottom and slightly up the sides using the bottom of a measuring cup for even compaction.
  3. Bake the crust in the preheated oven for 10 minutes. Remove and allow it to cool completely before filling.
  4. In a medium saucepan over medium-high heat, warm the heavy cream until it is scalding hot and small bubbles form around the edges—do not let it boil.
  5. Place the chopped bittersweet chocolate into a bowl. Pour the hot cream over the chocolate and let sit undisturbed for 4 to 5 minutes. Add the vanilla extract, then stir gently until the ganache is smooth and glossy.
  6. Pour the ganache into the cooled Oreo crust. Use an offset spatula to spread it evenly across the crust surface. Let the tart set by cooling it on the counter for 2 to 3 hours or refrigerate for 1 hour. Keep in mind refrigeration may cause condensation.
  7. Arrange the fresh raspberries on top of the tart in a circular pattern, placing each berry close to the next. Dust the entire tart lightly with confectioners’ sugar before serving.
