- 1 cup canned pumpkin
- 1 1/4 cup granulated sugar
- 1/2 cup vegetable oil
- 1 Egg
- 1 1/2 cup all purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon pumpkin spice
- 1 cup Dark chocolate chunks
Instructions
- Preheat oven to 350°F.
- Grease or spray a 9×5-inch loaf pan.
- Blend together pumpkin, oil, egg, and sugar in a large bowl.
- Add flour, salt, baking powder, baking soda, and pumpkin spice. Blend well, scraping down the sides of the bowl as needed.
- Stir in the dark chocolate chunks.
- Spread the batter into the prepared loaf pan.
- Bake for 55-60 minutes.
- Cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
Notes
- For a sweeter bread, use semi-sweet or milk chocolate chunks.
- Increase pumpkin pie spice or add cinnamon or nutmeg for a bolder spice flavor.
- Add chopped pecans or walnuts for extra texture.
- Serve warm slices with butter or pumpkin butter.
- This bread freezes well; wrap tightly and freeze for up to 3 months.
