  • 1 cup (105 g) pecans, finely chopped
  • ¼ teaspoon kosher salt
  • ½ cup (62.5 g) confectioners’ sugar for coating

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the butter, ½ cup of confectioners’ sugar, and vanilla extract until smooth.
  3. Gradually mix in the flour, pecans, and kosher salt until combined.
  4. Drop portions of dough onto the prepared baking sheets and roll into smooth balls.
  5. Bake for 10-12 minutes until lightly golden brown.
  6. Roll each cookie in the remaining ½ cup of confectioners’ sugar while still hot.
  7. Roll each cookie again in confectioners’ sugar after cooling.
