- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 cup (105 g) pecans, finely chopped
- ¼ teaspoon kosher salt
- ½ cup (62.5 g) confectioners’ sugar for coating
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter, ½ cup of confectioners’ sugar, and vanilla extract until smooth.
- Gradually mix in the flour, pecans, and kosher salt until combined.
- Drop portions of dough onto the prepared baking sheets and roll into smooth balls.
- Bake for 10-12 minutes until lightly golden brown.
- Roll each cookie in the remaining ½ cup of confectioners’ sugar while still hot.
- Roll each cookie again in confectioners’ sugar after cooling.
- Store in an airtight container at room temperature for up to 3 days.
