These no-bake Chocolate Cherry Coconut Truffles are a quick and delightful treat. They combine rich chocolate, sweet maraschino cherries, and shredded coconut for a burst of flavor in every bite.

- 1 cup shredded sweetened coconut flakes
- 1/2 cup maraschino cherries, chopped and drained
- 1/4 cup sweetened condensed milk
- 1/2 teaspoon vanilla extract
- 12 ounces chocolate candy melts or chocolate coating
Instructions
- Drain and finely chop maraschino cherries. Pat them dry with paper towels to remove excess moisture. Mix the chopped cherries with shredded coconut and a tablespoon of cherry juice or syrup. The mixture should be moist enough to hold together.
- Scoop about a teaspoon of the cherry-coconut mixture and roll it into a compact ball. Place each ball on a parchment-lined baking sheet. Chill the centers in the freezer for 15–20 minutes until firm.
- Chop chocolate into small, even pieces. Melt using a double boiler or microwave in 30-second bursts, stirring each time, until just melted (around 115°F for dark chocolate). Avoid overheating.
- Using a fork or dipping tool, submerge each chilled cherry-coconut ball into the melted chocolate. Tap gently to let excess chocolate drip off. Return each coated truffle to the parchment-lined tray.
- While the chocolate is still wet, sprinkle the tops with extra shredded coconut or a tiny piece of cherry for decoration.
- Allow the truffles to set at room temperature or refrigerate for 10–15 minutes until the chocolate is firm. Do not stack them until fully set. Store finished truffles in an airtight container in the refrigerator for up to two weeks. Bring to room temperature before serving.
