Ingredients

  • 2 cups cooked chicken breast, shredded or thinly sliced
  • 4 cups napa cabbage, thinly sliced
  • 1 cup red cabbage, shredded
  • 1 cup carrots, julienned or shredded
  • 3 scallions, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sliced almonds or toasted sesame seeds
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, finely minced

Instructions

  1. Cook chicken if needed, then shred or slice thinly.
  2. Combine cabbage, carrots, scallions, cilantro, and chicken in a large bowl.
  3. Whisk soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until smooth.
  4. Pour dressing over salad and toss gently until evenly coated.
  5. Top with almonds or sesame seeds and serve.
