- 4 boneless, skinless chicken thighs
- 1 cup long-grain white rice
- 3 cups chicken broth
- 4 cloves garlic, minced
- 1 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Chopped parsley, for garnish (optional)
Instructions
- Season the chicken thighs with salt, pepper, and Italian seasoning.
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken thighs to the skillet, cooking for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the rice, coating it well with the garlic and oil for about 1-2 minutes.
- Add the chicken broth to the skillet and bring to a boil. Reduce heat to low and cover, simmering for about 15 minutes, or until the rice is tender.
- Once the rice is cooked, stir in the grated parmesan cheese until creamy and well combined.
- Place the seared chicken thighs back into the skillet, nestling them into the rice, and let them heat through for a few minutes.
- Before serving, sprinkle with chopped parsley for a touch of color.
