- 1 pound boneless, skinless chicken breast
- 4 cups chicken broth
- 1 package (9 ounces) refrigerated tortellini (cheese or chicken)
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- In a large pot, add the chicken breast and cover it with the chicken broth. Bring it to a boil over medium-high heat.
- Reduce the heat and let it simmer for 15 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Stir in the tortellini and cook according to package instructions, usually around 3-5 minutes.
- Once the tortellini is cooked, add the fresh spinach to the pot. Stir until wilted.
- Taste and season with salt and pepper as needed.
- Ladle the soup into bowls and enjoy warm.
